Report: Flavor trends in bakery

Seasonings and spices supplier Fuchs North America released a report exploring flavor trends to support the bakery category.

From the company that recently rolled out hemp-inspired seasonings, Fuchs North America has developed a white paper about innovating in the baked goods category.

The report titled “Bringing Something New to Baked Goods” explores flavor concepts and trends that are elevating baked goods. Store Brands received a preview of the report and the paper says that during the pandemic months, baked goods became a comfort food and grew in sales, up nearly 8%. To ride the wave, however, there are flavors and ways to enhance baked goods further.

Just a few mentioned in the report include looking into bringing global flavors to the bakery, as 16% of consumers are interested in purchasing globally inspired baked goods, per the report. Flavor recommendations include Baklava, Basbousa, Mooncakes, Conchas and Shokupan. The report also finds trends around indulgent flavors, providing twists on old favorites (a millennial preference) and more. The report lists flavor recommendations and insights across five trends.
